In the lack of a proper winter in Norway, we decided to carry on and make an artificial winter. This takes us back to the memories of snow, skiing and digging through snow to get our cabins. The flavor we aimed for, was a citrus and herb combination, with a gentle bitterness from hops and the round flavor from the wheat malt.
For our initial brew, we decided to make it in our test pot. The brew data looks like this;

We boiled off quite a lot more water, and got a higher alcohol rating at the end (6,8) but thats due to the very small pot (2.91 gal) and some other difficulties when brewing this small. The baseline for this witbeer is the same as our fruit beer, due to the nice balanced recipe with a subtle hops addition. Its proven to be a great base recipe for this kind of beer.
Initial taste of the beer without aging was very good. Hopefully, a few weeks will make this a delicious wit beer.
